Akara/ Bean Cakes

It's amazing how you can use beans to make things that looks completely different from the other, whether it's beans porridge or moimoi or akara, they all have different and unique look and even taste that if you never have prior knowledge of this recipe, you can never guess that they are all made by beans.
Akara/ Bean Cake is a dish made from peeled black-eyed peas formed into a ball and then deep-fried palm oil or vegetable oil. It is found in the Nigerian and Brazilian cuisines. The dish is traditionally encountered in Brazil's northeastern state of  Bahia and Pernambuc especially in the cities of Salvador, Recife and Olinda, often as street food, and is also found in most parts of Nigeria, Ghana, Togo, and Benin. Akara/ Bean Cake was a recipe taken to Brazil by the slaves from the West African coast. It is called "akara" by the Igbo people of south-eastern Nigeria and the Yoruba people of south-western Nigeria, "kosai" by the Hausa people of Nigeria In Ghana, the Akara/ Beans Cake is called "koose" in Ghana and is a popular breakfast dish, eaten with millet or corn porridge. In Nigeria, Akara is commonly eaten with bread or "Ogi" a type of Cornmeal made with fine corn flour.

Ingredients
1 cup of brown beans or black eyed beans

2 Habanero pepper/scotch bonnet( Atarodo)

1 Onion Bulb

Salt to taste

Vegetable oil or Palm oil for frying

Directions
Remove the beans coat ( soak the beans for 30 (thirty) minutes- 1 (one)hour and peel off the coat by rubbing in between your palms or you can use the easy blender method by Pouring the beans in your blender with the pepper and onions, add little water ( the water should be just enough to move the blades of your blender, what you need is a thick consistency) and blend to a smooth paste

Pour the mixture in a bowl add in the salt to taste and mix thoroughly

Set a pan on medium heat, add in the oil, the oil should be at least 3 inches deep

Once the oil is hot but not too hot so your akara can cook both in the inside and outside, Scoop the batter with a tablespoon and drop it gently into the hot oil

Fry on each side until golden brown

Remove and transfer the Akara in a sieve lined with paper towels

Serve Akara with Pap/Ogi/Akamu, Custard or Bread Akara/ Bean Cakes by Adedayo
