Party Jollof Rice

So many people love the party jollof rice, the taste and colour is just so cool. However, as much as most people try to replicate the kind of jollof rice made in parties, most times, it just do not turn out that way. It's either the colour is not red enough, or it just do not taste like the party jollof rice. Not to worry, Adedayo has come up with steps to help you make that party jollof rice and here is how:

Ingredients

Rice

Tomatoes

Tatashe (Red Bell pepper)

Atarodo( Habanero pepper/scotch bonnet)

Tomatoe Paste

Curry

Thyme

Bay Leaves) optional)

Stock cubes

Beef/ chicken stock

Directions

Blend tomatoes, pepper until smooth

Pour the pepper in a pot and bring to a boil until the liquid have dried as much as possible

Per boil the rice ( this helps to get rid of excess starch in the rice and also helps to start the cooking process

In a pot on medium heat, heat up vegetable oil, add the chopped onions and fry, once the onions are translucent add the pepper, curry, thyme allow to fry for 10 min, now add the tomatoes paste, ( tomato paste should be 40% while pepper should be 60%) cook till it losses it's sour taste ) Fry, add salt to taste and stock cubes

Now add the par boiled rice and mix thoroughly, add the chicken/beef stock or more water if you don't have more stock

Cover and leave on low heat to cook add the bay leaves if using , allow to cook till the rice is soft

Tip: To get the party Jollof rice, cover the pot and leave the rice to burn a little and stir the rice after few minutes of burning, and there you have the party jollof rice taste made right in your kitchen
